Description

Rice goes through a variety of processes before its ready for cooking. After harvesting, the seeds are run through a rice huller/husker for milling to remove the outer grain husks. After this process, you’re left with whole brown rice. Nice and simple.

To create white rice, there are added steps. The germ and inner husk (bran) are removed, and the grain is then polished, usually using glucose or talc. The complete milling and polishing that converts brown rice into white rice destroy 67% of the vitamin B3, 80% of the vitamin B1, 90% of the vitamin B6, half of the manganese, half of the phosphorus, 60 % of the Iron, and all of the Dietary fiber and essential fatty acids. Fully milled and polished white rice is required to be ‘enriched’ with vitamins B1, B3, and Iron.

The Loss of nutrients is broad and substantial. Plain white rice has far less Vitamin E, Thiamin, Riboflavin, Niacin, Vitamin B6, Focalin, Potassium, Magnesium, and iron. Also, the dietary fiber contained in white rice is around a quarter of brown rice.
